As the title says, how on earth do you escape Aphids and Hydras on slow bots like Leo and on Griff?
Countless times I have charged in with my Leo, and some <insert choicest expletive> shoots that dreaded 'Ring of Fire' right on my face. You can't even shoot that <again, insert some more colourful expletives> with anything since well, it already bounded away or is under cover.
So, how on earth do I dodge those?

Simply put you can't avoid all missiles from a salvo ofn Aphid in a walking Leo or Griffin if there's no cover.
For Hydras, it's a full missile strike you'll get if there is no cover. Hydras will just chase you down even if you jump in a Griffin if you are in the open too. Leo's cannot avoid Hydras if in the open at all. Note that hiding behind another bot is the same as cover - even if you are in the open.
You can avoid some of the Aphid missiles in a walking Leo or Griffin if you walk perpendicular to the missile's approach path --- but you must have your legs already pointed in the correct direction before the missiles are fired and you must be already moving well before the missiles land. You can cut the damage in half if you do this right.
Aphids will miss 100% if you jump a Griffin anywhere but forward to the coming missiles if you jump as soon as you see the missiles launch.

... don't charge into a situation where you can be hit by aphids/hydras and not be able to murder the bot firing them?

There are only so many things you can do while going for the centre beacon in DC or Shenzhen. Besides, aren't their ranges like 600m? What will I do about a camper at 600m with my Tri-Pinata/Thunder Leo? These missiles drop from the top so short covers don't even help.

Aphids are only 350m. I find aphids to be a lot more annoying than Hydras which, yeah, are hard to avoid with much longer range (600m).

Use cover on maps where aphids are more prolific. Hydras are the the tactic, just harder to avoid.

Hug the walls, if you are on a Lancelot without Ancile and have no walls nearby, just cry to your death (Ancile shuts down Hydras and cuts Aphid potential by quite alot).

Out in the open you are going to eat Aphids and Hydra...A la Captain Obvious. Learn to move around the map with your bot in contact to a building wall. Walk around buildings with out loosing contact with the wall. Those top corner edges mean everything...
This is why I love the Rog for fighting Aphids and Hydra:
It can jump clear on Aphid launches and is fast and small to hug building walls so Aphids and Hydra strike roof/ corner edges and not your bot.

Know who the threats are and where they are, so you know when you have to move tactically (head down, use cover, stick to walls, move from cover to cover in rushes) and when you don't.

The question shouldn't be how to escape them, but how to avoid them!
What I mean is that if you're in something slow like a Leo, especially bots with no extra abilities, then you should be taking note of where the Aphids are and keep out of range and with cover between until you get a chance to pop your own shots back at them or a more suitable teammate takes them out. The Hydras are a different story. They have a long range and are extremely difficult to avoid, even for experienced users against newbie hydras.
The good news? Hydras really don't inflict a ton of damage in comparison to aphids. In a Leo, with such a massive HP pool, the Hydras will likely only chip away relatively insignificantly unless they are leveled well above that of your bot. With a slow bot the chances of you being able to flank a unit throwing Hydras is pretty slim. You'll just get eaten away en-route and/or intercepted and taken out. That is what Hydras are supposed to do. They distract, frustrate, and force you into cover which either controls your movement or causes you to make mistakes on the battlefield.
Often when I am using Hydras I notice that the missiles collide with objects halfway to their target, not the cover they are directly hiding behind. If at all possible, try to locate higher objects that the sweeping and curving missiles are passing nearby and move to use it as an indirect cover.
Eject and drop in a faster bot that is better suited for a face off or flanking and destroying if needed. Otherwise, be patient and focus on what you can while teammates take them out. Even if you're not firing on them, just being a presence helps your team. Especially if you can divert their attention away from team mates on the attack.

I've learned that you can easily dodge homing missiles in any bot. Simply press the blue button on the top right of your screen. When the missiles are near quickly press "leave game" problem solved ... booya !?

As the others told:
Situational awareness
+ with a Griffin its quite easy to dodge aphids by jumping side- or backwards. Of course you need to be aware that aphids could flying around and you have saved your jumpjet just for this situation
+ with the leo you might consider change it for a griff, a rhino, an Ancilot or a carnage somewhen. If you like to fight in a timeless oldtimer, than notice that the pinata/thunder leo is a shy predator, who loves wall-hugging and waits behind corners to kills its prey with a surprise attack, but rarely comes out in the open. The zeus/pin or trident-pin or treb/gekko or aphid/ancile setups are all possible counters to aphid or hydra.

Before they nerfed aphids, I used to run a maxxed aphid/Hydra Griff, it was so fun to take out pesky aphid Patton's, but the nerf came and I have since sold my hydras, but the memory of pissing those op aphid Patton's pilots off will remain with me forever.

walk perpendicular to the missile's approach path . Does it matter if the person firing the aphids leads, trails, or points directly at the target? Also maybe you can answer another question related to this topic. Some times aphids seem to go over a Galahad's shield and other times they don't. What gives?

LUCK They need to make the Tridents splash damage as finicky as aphids flight path! Like ol' acethunder suggested. But I digress as that is a discussion for another place.
