My favorite book of all time (Dune) happens to be sci-fi. Dune is pure genius. I've read it way too many times and am expectantly waiting for the new 2020 movie. I'm sure many in this forum have read it, but if not give it a shot. I really wouldn't recommend any of the sequels as I didn't find them near as good.
But in general, I enjoy dark fantasy over sci-fi. Some of my fav authors are Steven Erickson, Glenn Cook, Joe Abercrombie, Mark Lawrence and of course Stephen King. Any of these guy will give you hours of enjoyment.

Jonathan Yanez. Most of the books I've read by him were excellent.

If you are a fan of prose, dying earth genre, and fantasy, I recommend the solar cycle books by Gene Wolfe (Four books in all, totaling the length of one of Terry Brooks’ books, however, in depth, as deep as you can get.

Another thread got me thinking about this...
What are some Sci Fi (and/or Fantasy) books that you dig? Can be any sub-genre.
Michael Moorco ck (damn filter, it's his damn name, get over it)
Start with Elric, then corum or hawkmoon/count brass/erekose.
ONLY get this book that look like this:
There are 6, and this was the best format. Lots of weirdo "other" stories that muddle things, so definitely read these first, then branch.
Stephen R Donaldson
Lord foul's Bane is the first of the series, 3 in series 1, 3 in 2, 4 in 3. Quite long but AMAZING, ESPECIALLY the first 2 trilogies.

Just recalled a few, probably lesser known as they’re a bit older.
The Deverry series by Katherine Kerr. Set in the Deverry lands, and following the cycles of life of the protagonists. Each character lives multiple lives over times. Any ‘debt’ owed needs to be repaid, so they keep re-meeting each other. They have no memories of their former lives except the main character who’s trying to help them.
The Fey by Kristine Kathryn Rusch. The Black King of the Fay is nearing the end of his life, so wants to find the lost Grandchildren of his to continue his line. In the world of the Fey, only the strongest can rule. Plots, twists, backstabs, betrayal, the series has it all.

Haven’t recalled that in years, Chronicles of Thomas Covenant the Unbeliever is the first, I believe. Amazing author, I hated the main character for most of the first book.

Lots and lots to digest here, I'll be mining this thread for a good few months, thanks for sticking it on here.
If they haven't already been mentioned, I'm a huge fan of Jeff Noon's Vurt novels, Neal Stephenson and, predictably enough, Philip K D1ck. I quite enjoyed the Stephen King's Gunslinger series too, but the film was shocking!
Edit: Pierce Brown's Red Rising books were good too.

Jim Butcher's DRESDEN FILES books are awesome. I recommend reading them in order or you will spoil some of the story lines. (If you watched the TV series and were turned off...well...the shows sucked.) Harry Copperfield Blackstone Dresden is a wizard in Chicago. (He's in the yellow pages under "Wizard) In between fighting vampires, demons, and other evil magical beings he assists the CPD as a consultant in "unusual" homicides.
John Ringo writes lots of military fiction (GHOST SERIES/POSLEEN WAR/CENTURIAN) The sexual content in the GHOST series can make the reader to through puberty again, take that for what it's worth.
CALLAHAN'S BAR books by Spider Robinson are entertaining but not engrossing.
L. RON HUBBARD'S MISSION EARTH SERIES was good enough for me to work through all 13 novels. BATTLEFIELD EARTH is a FAR better book than movie. (You do not need to be a SCIENTOLOGY follower to enjoy them... it's not referenced in the books.) Edgar Winters recorded a soundtrack album for MISSION EARTH.
Other series I cannot remember authors of:
WINGMAN HAMMER'S SLAMMERS (Drake?) DREAMLAND series...a spin off of FLIGHT OF THE OLD DOG and its following novels. ROGUE SQUADRON (Stackpole?) MAN-KZIN WARS
