Buffalo is very tasty. Venezuelan beef is excellent. They graze an arid type cattle on the flooded grasslands. The beef even when cooked fully retains a pink color, and has an ever so slight sweet taste. Haven't had the pleasure of Kobe beef yet, but someday.

Heavier bun, slightly roasted on the grill (preferably a grill dirty from burger already . Only beef, medium fat. Chopped preferably. Grilled to point when some pink is still left in the middle. NO salt, pepper, anything to the meat before grilling, only sprinkle after meat is done! No cheese. Vegetable of the day any or all: lettuce, tomatoes, cucumber (pickled sometimes even better, but in small qty), mild onion Topping: 70/30 mayo/ketchup + some tabasco and few drops of lemon. Add herbs if u like, but then let it soak for few hrs. Avocado/guacamole instead or with above.

Yes! Back in France, we have something called a tartare steak, which is basically a raw burger. Normally us French eat it raw, but I hate raw meat, so I just make up a tartar steak as usual, then I just slap it onto a plate grill, cook for a bit so that it's cooked like a rare steak, and voila! One rare burger! Place it onto toasted white bread (burger buns are a tad too thick for the red juice to seep into) along with a slice of vintage cheddar. PS. For Goodness's sake, please tell your butcher that you mean to make steak tartare! He will then give you the freshest cuts available. If you buy regular mince, the quality won't be as good, and you run the risk of getting food poisoning. One day I decided to try out the cafe near my house, and I assumed that "steak tartare" was steak with tartar sauce. (don't blame me, my French was, and still is, horrid) It was a tad bit shocking when I was served a piece of raw meat. ? Oh well, at least I'm not in France that often, usually running an arms factory (definitely not a dream job, having your office next to thousands of tonnes of explosives) on the outskirts of Moscow.

Well, I think, almost everybody eats burger. At least sometimes. So do I. In germany you can find small burger restaurants almost anywhere. I tried different types, of course. Pork, beef, chicken, turkey, fish and once kangaroo. It is natural, to try make them yourself. We do that for several years now and we experimented quite a bit. Be it different sauces, toppings or side dishes. Selfmade BBQ sauce, honey mustard, or peanutbutter. Selfmade french fries out of fresh potatoes, chicken wings, Bacon popsicles, baby ribs. Well, out of all that, we made ourselfs a certain standard. Must haves, you can say. Yeah, I know, just a matter of time, till a wannabe comedian cries out for Kobe beef. Just ignore him. We have different buns. I prefer thick sliced roasted white bread. But I want to try, making brioche myself. Our patties are a mix of beef and pork from a lokal butcher. Ratio 60/40. Flavored just with salt and black pepper. If you say so early enough, you get small sliced raw onions in your patty. For those, who like it. Why 60% beef and 40% pork? Pork has more fat. Fat carries the taste and keeps it juicy. Bacon, cross and tasty, covered in maple sirup. I use a silicon brush for the sirup. Roasted onions, nice and crunchy. Cheese? Cheddar, Emmentaler, Gouda or Chester. I prefer a slice of Gouda or Emmentaler and crumbled Mozzarella. Sauce? A very thin layer of peanutbutter for my bottom bun, ketchup mixed with mustard on top of my toppings, right under the top bun. That is my standard burger. I eat it with fries and grilled chicken wings. So, how about you? Burger: Yes, or no? When yes, how? My man... Did you say peanut butter? On a burger? Yall mofos are crazy as hell. Now, what is this bacon popsicle that you speak of? You got my attention with the bacon popsicle. Each to their own but Holy cow - PB in a burger?! Depends what sort of PB....if natural, crunchy and not too damn sweet can see that working...aka like a Satay burger. But not sure how that mixes with ketchup and mustard lol My best burger ever - The MONDO burger at New New New York, Vegas (c2007). Don't think it exists anymore DIY - simplicity. Ground chuck, flame grilled, fresh lettuce and tomatoes from the garden. Home made bread rolls. A pickle. Local farm bacon (English bacon - not that crappy streaky stuff). And a little home made tomato relish. Melted English cheddar (mild not too mature)

I suppose we could include the awesome cannibal sandwich into this conversation. There's a ton of variations on this but the one I used was to pick out a nice steak and have the butcher grind it. Then get a nice slice of onion (vidalias are the best).
Form the meat into a patty Toast two slices of the bread of your choice (not white though) Please the patty, onion and a good slathering of horseradish between the bread. Chow down.
