I prefer of ramen over pho primarily because of the noodles. Not a real big fan of rice noodles, but I love wheat noodles. Especially udon, but that wasn't an option.

I'm assuming when you said Raman you meant real Ramen and not instant plastic package stuff which I think most who read this are going to confuse it with. Is that correct? LOL, I do have a real soft spot in my heart for instant Ramen.

I meant real quality ramen as opposed to the instant kind. I've had Michelin star ramen and I have to say it's awesome.
I'm not a fan of rice noodles though Pho stock is awesome.
But ramen soups and pretty wicked too. So based on noodle flavour and texture, I say ramen for me. But my wife likes pho better

I dig rice noodles, but the selling point for me is the broth. Anytime I've had Pho it's had a good amount of liquid with it, makes ramen seem more like a stew

Pho is a traditional noodle and soup dish originally from Vietnam. The general base is a beef stock broth with rice noodles.

I prefer udon.
I usually prefer ramen over pho. A richer and in my opinion tastier broth as well as better noodles. Not sure if this is generally true or if the one ramen place where I live just happens to be high quality than the dozen or so pho places.

Pho Soup Base: rich beef/chicken bone Noodle: Fresh rice noodle (flat noodle similar to tagliatelle/pappardelle) Garnish: Thinly sliced raw beef (instantly cooked by pouring the boiling hot soup), or chicken Greens: Beanspouts/beanshoots, spring onion, herbs (coriander, basil, mint, chilli, etc) Ramen Soup Base: usually rich pork (can be flavoured with miso or soy) Noodle: Fresh wheat noodle Garnish: Various, anything from soft boiled egg, to tempura Greens: Beanspouts/beanshoots, spring onion, seaweed Probably don't need to add udon to the poll, while I do prefer udon, but adding leads to other popular soup based noodles to be considered.

I'm a ramen guy at heart, whether cheap crap or high end....still like pho but ramen will nudge it out any day with me. Udon is in third place....
